Shrimp in Salsa Criolla

Shrimp in Salsa Criolla


12 large shrimp shelled and de-veined

1 spoon of Sofrito

2 garlic cloves

1 packet of Sazon

1 white onion

1 can of tomato sauce

1 green bell pepper

Olive oil


Heat the olive oil in a large skillet over medium heat until just fragrant. Add the onions, green pepper and garlic, cook for 3 to 4 minutes or until the onions are translucent. Add the tomato sauce into the pan and bring the sauce to a simmer and reduce the heat to medium low heat. Allow the sauce to simmer gently for about 15 minutes. Add the shrimp and cook in the sauce for 3 to 4 minutes or until shrimp is fully cooked through stirring occasionally and flipping the shrimp about halfway through.


Mofongo – Garlic Flavored Mashed Plantains



4 green plantains

4 teaspoons of olive oil

chicharron (crunchy pork skin)

frying oil

3 garlic cloves, mashed


Peel the plantains, cut them into 1 1/2 inch slices, soak them in salty water for 15 minutes, drain and dry them before putting them on the hot skillet with oil. Fry them for about 12 minutes at medium low heat or until they turn light brown. Make sure to turn them. Do not brown them too much, so they are easy to mash. Remove them and mash them on a mortar. Add some mashed garlic and pieces of chicharron. Once you have mashed all the plantains, mold them into the shape of a half sphere using your hands or a container. Serve hot with your favorite meat.
